INGREDIENTS
2 pieces of p0rk, 1 boneless thickness
2 tablespoons brown sugar
1 teaspoon of salt
1 teaspoon of black pepper
1 teaspoon of paprika
1/2 teaspoon onion
1 tablespoon butter
1 cup of chicken st0ck
1/2 tablespoon of Worcestershire sauce
1 teaspoon 0f Liquid Smoke
INSTRUCTIONS
Mix seasonings and brown sugar and rub into both sides of the pork.
Set Instant Pot with stir-fry (high) and add tablespoon butter. After it is hot, add pork and chocolate on both sides of each for 1-2 minutes. Remove pork and set aside. Press cancel.
Add 1 cup of chicken stock and use a wooden spoon to remove the beets from the bottom of the pan. Add Worcestershire sauce and smoked liquid and add pork directly to the pan in liquid.
Safe lid, make sure ventilation is set to "sealing" and pressure cook (manual) for 7 minutes. After completion, let the pressure come out naturally for 12 minutes. After 12 minutes, quickly remove the rest, remove the lid and pork.
Let the pork rest for about 5 m1nutes before serving.

NOTE
For the best results, it is recommended to use salted pork. Packaging usually shows that pork contains a solution (usually 12%) to maintain moisture and softness.
If your pork chop has not been pre-brined as described above, it is strongly recommended to use simple saltwater: A solution of 1/4 cup (4 tablespoons) of salt to 1 liter (4 cups) of water. Place the pork (or other thin slices) in one layer on a shallow plate and then pour salt water over it. Let stand for 1/2 hour to 2 hours before cooking. (thanks to reader Jack P.)
